Ginger Chicken

I am finally getting to a place where I have processed a lot of the information from my trip, and realizing it is time to share.

Here are a few pictures to start with:

This is the before picture at the Portland Airport:

And.... after 24 hours of flight:

Yikes.

At least we made it with all our luggage?!?

It was well worth it....

One of the views that greeted us:

The first few days were spent recovering from that monstrous flight.

Soon after, we had one of the more meaningful experiences of our trip when our friend Sorn invited all the ladies over to his house to learn how to cook Cambodian Ginger chicken with his wife. It was great to spend some time packed into that tiny little kitchen learning how to cook this recipe:

Cambodian Ginger Chicken Recipe (Authentic)

4 large chunks of ginger (adjust to taste preference)
11 small cloves of garlic
1 whole chicken chopped up with a hatchet (yes, the Whole chicken)
1 TBS oil
1 dash of fish sauce
1-2 dashes of salt
2 dashes sugar
1 TBS MSG

Thats alot of ginger folks

Or.....

you can try:

Cambodian Ginger Chicken (Modified)

5 cloves garlic
½ -1 cup of slivered ginger (adjust to taste preference)
1 pound of chicken breast
3 stalks green onion
1 TBS oil
2 TBS sugar
1 TBS fish sauce
1 TBS soy sauce
1 TBS oyster sauce
Mince garlic and set aside
Sliver the ginger and set aside
Coarsely chop the green onion and set aside.
Chop the chicken breast into bite size pieces.
Over medium heat, sauté the garlic in oil until brown.
Add the chicken
Add Fish sauce, salt, sugar, oyster sauce, soy sauce, and chicken stock (or water)
Cook for 5 minutes, stirring occasionally.
Stir in the ginger slivers and cover and let cook another 4-5 minutes.
Add the scallions and turn off the heat.
Serve over rice.

Give it a try and let me know what you think. We pretty much ate this everyday we were there for one, if not two meals, thanks to our lovely friend being so kind and ordering for us.... I haven't been able to think about eating it since :)

Here are some other Cambodian delicacies:

Boiled duck egg

And some roadside munchies:

Now thats authentic Khmer food!
